Hemsley and Hemsley QUINOA BREAD | Gluten Free & Vegan

I was kindly gifted the Hemsley and Hemsley Good + Simple cookbook for my birthday and I came across this bread recipe. When I first read it I thought 'wow that seems easy' so I was intrigued to give it a go to see if it was any good!

I was seriously impressed with this recipe! Not only is it super easy to make but it tastes amazing! I am always on the hunt for a good Gluten Free bread recipe which uses simple and clean ingredients and I must say this is one of the best I have found! I do also love the Deliciously Ella Superfood Bread recipe however that one is heavy in nut content so depending on your preference the Quinoa Bread is a great alternative.

For this recipe you will need
300g Quinoa 
1 Medium size courgette
60g Chia Seeds
2 tbs Lemon juice
1/2 tsp Bicarbonate of soda
1/2 tsp Salt (I use pink Himalayan salt)
60g Coconut Oil


Step 1

The night before you want to make this bread you must soak your ingredients. Place 300g of Quinoa in a bowl and cover with twice the amount of water. In a separate bowl grate your courgette and mix in 60g of Chia seeds until well combined. Place the courgette mixture into the fridge and the quinoa can be left out in the kitchen. These bowls need to be soaked for at least 8 hours.

Step 2

Preheat the oven to fan 160℃/Gas mark 4. After 8 hours drain the quinoa and place into a blender along with all other ingredients. Blend until well combined for a minimum of 2 minutes.

Step 3 

Line a loaf tin with parchment paper and add the mixture. I used a small loaf tin and made two loafs however Hemsley and Hemsley recommend you use a tin 12cm x 23cm (900g).

Step 4

Place in the oven for 1 + 1/2 hours or until golden brown.

Step 5

Remove from the oven and allow to cool in the tin. After 15 minutes removed from the tin and allow to cool completely.

  1. Every time I make this it is soggy inside. I don't know where am going wrong as I follow the recipe! Any ideas? I have even left it for 2 hrs but still soggy!
